Blintzes with Goat Cheese and Honey Filling

Ingredients:

Filling:

cup fresh goat cheese (chèvre) |
1/2 |
cup cream cheese, softened |
| 1 |
egg yolk |

teaspoon lemon rind |
| 2 |
teaspoons local honey |

cup unsalted butter for frying blintz wrappers and blintzes and coating a baking dish Yogurt or sour cream for serving |
Directions:
- To make the blintz wrappers: Sift together the flour, salt, baking powder, and confectioners’ sugar. In a separate bowl, lightly beat the eggs, gradually adding the milk, vanilla, and grated lemon rind. Make an indentation in the dry ingredients, pour in the liquid, and, using a wooden spoon or a whisk, stir quickly until smooth.
- Heat a nonstick or well-seasoned 6-inch skillet or griddle over medium heat and lightly grease with ¼ teaspoon butter or oil. Ladle about 3 tablespoons batter into skillet and swirl to spread batter over bottom of pan. Cook for about 2 minutes, until bubbles appear on surface and it loses its sheen. Using a spatula, flip it over and cook until golden, about 20 seconds. If using a nonstick pan, you may need to butter the pan after cooking every fourth blintz wrapper. Remove to a plate and set aside. You should have 12 wrappers.
- To make the filling: Using an electric mixer, beat all ingredients together on medium speed until smooth.
- Heat oven to 350°F.
- Spoon a tablespoon of filling into the center of each blintz wrapper, roll the edges from each side, and tuck the ends underneath. Heat 2 tablespoons butter in a skillet and fry each blintz until slightly browned. Generously butter a baking dish and arrange fried blintzes in the dish. Dot the tops of the blintzes with remaining butter and bake for 5–10 minutes, until blintzes are fragrant. Top with yogurt or sour cream.
