Kofte Meatballs With Fresh
Onion Salad

Serves 6–8
If using wooden skewers, soak them in water for about 20 minutes before skewering the meat, to keep the wood from burning. You can also forgo the skewers, simply placing the meatballs loose on your grill.

Prep time: 30 minutes
Cook time: 6 minutes


Ingredients:

1 medium red onion 3 tablespoons lemon juice
1 1/2 teaspoons salt 1 pound ground beef
6 tablespoons chopped fresh flat-leaf parsley 4 garlic cloves, crushed in a press
1 1/2 tablespoons olive oil 1 tablespoon ground cumin
1 1/2 teaspoons paprika 1/2 teaspoon freshly ground black pepper
8 metal or wooden skewers

  1. To make Fresh Onion Salad: Slice the red onion very thin and toss with lemon juice and
    1/2 teaspoon of the salt in a small bowl. Set aside.
  2. Combine beef, parsley, garlic, olive oil, cumin, paprika, pepper, and the remaining teaspoon of salt in a medium bowl. Using fingertips, gently mix until evenly blended.
  3. Divide mixture into 16 balls. Place 2 on each skewer, shaping gently into oval shapes.
  4. Grill over medium heat or broil on medium for about 6 minutes, turning occasionally to ensure even browning. Serve with Fresh Onion Salad.
