Maple Goat-Yogurt Mousse

Makes 4 servings

Prep time: 30 minutes













Ingredients:

1 cup heavy cream 1/2 cup maple syrup
1 envelope unflavored gelatin 1 cup plain goat's milk yogurt

Directions:

  1. Combine heavy cream and maple syrup in a small saucepan, sprinkle gelatin over the top, and let stand for 5 minutes. Warm mixture over medium heat, stirring occasionally, until gelatin dissolves. Pour into a medium-size bowl, set the bowl in a bath of ice water, and stir frequently, until the cream is thick.
  2. Using an electric mixer on medium speed, beat until smooth, about 2 minutes, scraping down sides and bottom of bowl to ensure even mixing. Add the yogurt and beat for another 2 minutes, until the mixture begins to lighten. Spoon into four 1-cup dessert cups and refrigerate for at least an hour, until set.
  3. Serve the mixture topped with fresh, seasonal berries.
